This is a fun and healthy alternative to mashed potatoes. Cauliflower has a lower glycemic index, is lower in calories, and is full of vitamins and fiber.
Dice the cauliflower. Place cauliflower pieces in 2 inches of water in a medium to large pot. Cover pot and cook over medium heat until completely soft.
Place garlic into a food processor or blender with almond milk and olive oil and top with cauliflower. Blend until smooth (consistency of mashed potatoes).
Spoon out into a bowl and serve with fresh parsley. Add salt and pepper as needed. Enjoy!
