Slice beef into thin, long strips, and then soak it in cold water for 10 minutes. Rinse it under running water. Use a kitchen towel or paper towel to dry the meat.
Stir one egg white and baking soda and brush onto the meat. Let sit for 20 minutes.
Blend salt, soy sauce, ground ginger, ground white pepper, and ground cumin in a separate bowl.
Add the meat to the marinade and let marinate for 20-30 minutes.
