Roasted Balsamic Brussels Sprouts with Grapes and Goat Cheese

- 1 cup Brussels sprouts quartered
- 1 ⅕ tsp coconut oil
- ⅕ cup grapes halved
- 1 tsp balsamic vinegar can substitute balsamic glaze
- 5 tsp goat cheese crumbled

Preheat oven to 425.
Cut up the Brussels sprouts into quarters and mix with coconut oil.
Cook the sprouts on a baking sheet for about 3 minutes until the coconut oil melts.
Take Brussels sprouts out of the oven and gently toss them around in the coconut oil, and cook for another 15 - 20 minutes until brown.
Remove the Brussels sprouts from the oven and mix in the grapes and Balsamic vinegar or glaze.
Cook for 10 additional minutes, take out, and let cool.
Crumble the goat cheese into the sprouts and enjoy!
