Roasted Balsamic Brussels Sprouts with Grapes and Goat Cheese

This is a fun version of a favorite side!

Ingredients

  • 1 cup Brussels sprouts quartered
  • 1 ⅕ tsp coconut oil
  • cup grapes halved
  • 1 tsp balsamic vinegar can substitute balsamic glaze
  • 5 tsp goat cheese crumbled

Instructions

  • Preheat oven to 425.
  • Cut up the Brussels sprouts into quarters and mix with coconut oil.
  • Cook the sprouts on a baking sheet for about 3 minutes until the coconut oil melts.
  • Take Brussels sprouts out of the oven and gently toss them around in the coconut oil, and cook for another 15 - 20 minutes until brown.
  • Remove the Brussels sprouts from the oven and mix in the grapes and Balsamic vinegar or glaze.
  • Cook for 10 additional minutes, take out, and let cool.
  • Crumble the goat cheese into the sprouts and enjoy!
