3 Easy Recipes for Thanksgiving Leftovers

Thanksgiving is such a fun holiday. I love when we take a break from our daily routine to give thanks. I love all the festivities that go into planning, preparing and eating a shared meal. When the day is over and all the lThanksgiving leftovers go in the fridge, though, you may be wondering what you can do with it all without having to spend the next several days in the kitchen.

I definitely don’t like to throw out food so I am always coming up with ways to use my leftovers that are easy to put together. Here are some of my favorite recipes using Thanksgiving leftovers.

 

1.) Sweet Potato or Regular Potato Cakes

2 Cups Mashed Potatoes or sweet potatoes
2 Eggs
3 Scallions – Finely Chopped (if you don’t have scallions you can substitute with chives)
1 Tbsp Grapeseed Oil

Mix together all the ingredients. Pour a high heat oil like grapeseed oil into a frying pan. Warm over med. heat. Form 3″ cakes and gently drop into the pan. Cook until golden brown, flip and continue cooking until browned on both sides.

 

2.) Turkey Stir-fry

2 Cups Diced Turkey
4 Stalks Celery – Sliced
1 Medium Onion –  Diced
10 Mushrooms – Sliced
Soy Sauce – 2 Tsp
Sesame Seeds – 1 Tsp
(The great thing about stir-fry recipes is that you can add whatever veggies you have on hand. Carrots, broccoli, bell peppers, asparagus, Brussel sprouts. Add in sliced almonds. Have fun with this recipe!)

Dice left over turkey. Cut celery, onions and mushrooms into bite size pieces. Put sesame or other high heat into a pan and warm over high heat. Add vegetables to oil and cook until crisp yet tender. Add turkey and stir. Season with a splash of soy sauce. Sprinkle with sesame seeds.

 

3.) Turkey Soup

32 Oz Chicken Broth

4 Stalks Celery – Sliced

4 Carrots – Sliced

1 Medium Onion – Diced

1 Cup Peas

2 cups diced turkey

1/3 Cup Fresh Parsley – Chopped

Add Chicken broth to a large pot. Add sliced celery, carrots, and onions. Cook until just tender. Add peas and diced turkey. Season with salt, pepper and fresh parsley.
