Ingredients
- â…› lb ground turkey (cooked)
- ¼ cup corn (fresh or frozen)
- ½ can Rotel (any flavor)
- ¼ cup red enchilada sauce (Hatch is a favorite; organic is preferred)
- ¼ cup chicken broth (add more to desired consistency)
Instructions
- Place all ingredients in a soup pan and simmer for 20 minutes.
