Ingredients 

  • ½ sweet potato
  • 1 cup black beans (drained and rinsed)
  • ¼ cup green chiles (diced and drained)
  • 1 green onion (thinly sliced)
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • 1 tsp oil
  • ½ avocado
  • cilantro
  • salt and pepper (to taste)

Instructions 

  • Heat oil in pan at medium high.
  • Mix all ingredients together and form sweet potato mixture into patties.
  • Place the patty in heated pan. Cook for about 4 minutes on each side - until golden brown.
  • Carefully place on plate and top with avocado and cilantro
