  • ¼ roasted pepper (sliced)
  • ¼ roasted onion (sliced)
  • 1 ½ cups greens (any kind works)
  • 3 med-large shrimp (cooked)
  • 1 tbsp olive oil
  • ¼ lemon

  • Place roasted peppers and onions on a bed of greens. Top with the shrimp.
  • Dress the salad with olive oil, lemon juice, and salt and pepper.
