Ingredients
Salad
- 1 ½ cups spinach leaves (fresh)
- ¼ cup strawberries (sliced)
- 1 tbsp red onion (thinly sliced)
- 1 tbsp goat cheese (crumbled, optional)
- 1 ybsp almonds (sliced or can use chopped pecans)
Balsamic Dressing
- 1 tbsp balsamic vinegar
- 1 ½ tsp extra virgin olive oil
- ¼ tsp Dijon mustard
- ¼ clove garlic (minced)
- salt and pepper (to taste)
Instructions
- In a small bowl or jar, whisk together balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper. Set aside.
- In a bowl, combine spinach, strawberries, red onion, goat cheese, and nuts
- Drizzle with the balsamic dressing and toss gently. Serve immediately.
