A frittata is an egg-based Italian dish similar to an omelet. This hearty meal can be served for breakfast, lunch, or dinner.

Ingredients 

  • 1 ½ tbsp olive oil
  • ½ cup chicken breast (cooked and diced)
  • ½ cup peppers (sauteed)
  • ½ cup onions (sauteed)
  • 3 eggs (beaten)
  • 1 ½ tsp fresh parsley (chopped)
  • salt and pepper (to taste)

Instructions 

  • Preheat oven to 325 degrees.
  • Use an oven-safe pan and add olive oil to coat the bottom of the dish.
  • Add sauteed onions, peppers, and cooked and diced chicken to the baking dish.
  • Pour the beaten eggs over the onions, peppers, and chicken.
  • Add parsley and put the baking dish into preheated oven. Cook for about 10-15 minutes or until eggs are set.

Makes 2 servings.
