Ingredients 

  • ½ cup black lentils (use canned, low-sodium, and drain)
  • ¼ tsp salt
  • tsp black pepper
  • 2 ¼ tsp extra-virgin olive oil
  • 2 ¼ tsp red wine vinegar
  • ½ cup vegetables of your choice (recommended - zucchini, red pepper, and onion (may also look up our Grilled Vegetable Recipe))
  • 2 leaves romaine lettuce (chopped)

Instructions 

  • Warm the lentils in pan on stovetop.
  • Once warmed, place lentils over sliced lettuce, and add grilled vegetables.
  • Combine red wine vinegar and olive oil in a bowl to create a dressing and pour it over the lentil and veggies.
  • Salt and pepper to taste.
