Ingredients
- 2 oz chicken (cooked and diced)
- 1 leaf lettuce (romaine or red leaf (large))
- ⅓ cup cooked quinoa (cook according to package)
- 2 tbsp salsa (any kind)
- 2 tsp coconut milk (dairy free yogurt can be substituted)
- ⅓ tomato (diced)
Instructions
- Mix chicken, quinoa, salsa, yogurt (or substitute), and tomato in bowl.
- Place filling inside lettuce leaf, roll up, and enjoy.
