Ingredients 

  • 2 oz chicken (cooked and diced)
  • 1 leaf lettuce (romaine or red leaf (large))
  • cup cooked quinoa (cook according to package)
  • 2 tbsp salsa (any kind)
  • 2 tsp coconut milk (dairy free yogurt can be substituted)
  • tomato (diced)

Instructions 

  • Mix chicken, quinoa, salsa, yogurt (or substitute), and tomato in bowl.
  • Place filling inside lettuce leaf, roll up, and enjoy.
