This recipe swaps out the traditional beef patty for a hearty portobello mushroom cap, grilled to perfection and topped with all your favorite fixings.

Ingredients 

  • 1 portobello mushroom (large cap)
  • ½ tsp olive oil
  • ½ whole wheat bun (organic or GF or 1 slice of whole wheat bread)
  • 1 tbsp blue cheese (crumbled, optional)
  • ½ cup arugula (can substitute other lettuce)
  • 1 slice tomato

Instructions 

  • Heat grill to medium or oven to 350º.
  • Brush both sides of the mushroom with olive oil. Put the mushroom on the grill or in the oven for 4 minutes on each side.
  • Place mushroom caps on bread or bun.
  • Sprinkle with blue cheese, and top with tomato, arugula, and lettuce. Eat open-faced.
