Ingredients 

  • 1 - 4 oz chicken breast (cooked and diced)
  • 1 tbsp dried cranberries
  • ½ apple (chopped up into bite-sized pieces)
  • ¼ cup plain Greek yogurt (Substitute with dairy-free yogurt if needed.)
  • ¼ tsp curry powder (add more if you'd like more spice!)
  • 2 leaves lettuce (boston bibb or romaine are best)
  • 1 tbsp cilantro (optional)

Instructions 

  • Combine first 5 ingredients into a bowl and mix around until the yogurt is coating everything else.
  • Gently put the filling into a lettuce and wrap or serve on top of lettuce for a yummy salad! Garnish with some fresh cilantro for an even more authentic Asian taste.
