Ingredients
- 1 sweet potato (medium)
- 2 tbsp black beans (drained & rinsed)
- 1 tbsp corn (thawed)
- 1 tbsp red bell pepper (diced)
- 1 tbsp cilantro (chopped)
- 1 ½ tsp lime juice (about ⅛ of a lime)
- ½ tsp olive oil
- 1 pinch cumin
- salt & pepper (to taste)
- 1 tbsp Greek yogurt
Instructions
- Mix beans, peppers, corn, olive oil and cumin.
- Cook sweet potatoes until soft. Split each potato open.
- Gently remove most of the orange part and smash.
- Stir in bean mixture.
- Put yogurt, lime juice and cilantro in a blender. Blend until smooth.
- Drizzle yogurt sauce over sweet potatoes.
