Ingredients
- ½ cup spinach (fresh)
- 1 tsp non-fat Greek yogurt
- 1 tsp cottage cheese
- 2 tsp egg (beaten)
- 1 tsp shredded mozzarella
- 1 wonton wrapper
Instructions
- Preheat oven to 350°.
- Spritz mini muffin tin with oil.
- Press wonton into a muffin tin.
- Put in the oven for 5 minutes.
- Put half of the spinach, yogurt, cottage cheese, eggs, and salt and pepper in a blender. Blend until smooth. Then empty the blender and do the 2nd half of those ingredients.
- Pour spinach mixture into wontons and top with mozzarella cheese.
- Put in oven and cook until spinach is set and cheese melted.

is there a replacement for cottage cheese?
You could substitute with more of the Greek yogurt or with ricotta cheese!
