Ingredients
Dressing
- 2 tsp peanut butter (no sugar added)
- 2 tsp water
- ½ tsp olive oil
- 1 tsp seasoned rice vinegar
- 1 tsp agave (or honey)
- 1 tsp soy sauce (low sodim)
- â…› tsp sesame oil
- ¼ lime (juiced)
Salad
- 1 cup cole slaw mix
- 2 tsp cilantro (chopped)
- 3 tbsp edamame (shelled)
- ½ green onion (chopped)
- 2 tbsp carrots (shredded)
- 2 tbsp red pepper (diced)
- â…“ cup chicken (cooled and shredded or chopped)
Instructions
- Make the Dressing: Blend all peanut dressing ingredients until smooth. Set aside or refrigerate if making ahead.
- Assemble the Salad: In a large bowl, combine coleslaw mix, cilantro, edamame, green onion, carrot, bell pepper, and chicken.
