Ingredients
- ¼ cup prunes (pitted; can substitute dates)
- 3 tbsp boiling water
- ¼ cup cacao powder (Can sub cocoa powder but cacao has more nutrients)
- 1 egg
- 1 ¾ tsp maple syrup (can sub honey)
- 1 ¾ tsp vanilla extract
- ¼ cup dark chocolate chips
- ½ cups strawberries (chopped)
- ½ cups blueberries
Instructions
- Place dates or prunes in a glass dish and pour boiling water over them. Let sit and soften for 15 minutes.
- Preheat the oven to 350ºF.
- Grease a baking dish or line with parchment paper. Â
- Put dates/prunes and the liquid into a blender. Add eggs, maple syrup, and vanilla and blend until smooth. Add chips and blend until almost smooth. Pour the mixture into a bowl and stir in cacao powder.
- Pour the batter into a prepared baking dish. Put in oven and cook for about 35 minutes or until batter is set.
- Once it cools, top with berries and enjoy.
