Ingredients
- ¼ lb ground beef (lean, grass-fed recommended)
- ¾ cup chicken broth
- 1 cup tomatoes (crushed, canned)
- 1 ¼ cups vegetables of your choice (diced; onion, zucchini, carrots, celery recommended)
- ½ cup dark greens (packed; recommend kale and spinach)
- ¼ tsp smoked paprika
- ¼ tsp dried tarragon
- ⅛ lemon juice (freshly squeezed)
- feta chesse (optional topping)
Instructions
- Cook beef in a pan. Add remaining ingredients and cook until vegetables are soft. I like to serve with crumbled feta on top.
