Ingredients 

  • ¼ lb ground beef (lean, grass-fed recommended)
  • ¾ cup chicken broth
  • 1 cup tomatoes (crushed, canned)
  • 1 ¼ cups vegetables of your choice (diced; onion, zucchini, carrots, celery recommended)
  • ½ cup dark greens (packed; recommend kale and spinach)
  • ¼ tsp smoked paprika
  • ¼ tsp dried tarragon
  • lemon juice (freshly squeezed)
  • feta chesse (optional topping)

Instructions 

  • Cook beef in a pan. Add remaining ingredients and cook until vegetables are soft. I like to serve with crumbled feta on top.
