This simple Greek bowl is a nutritious and delicious meal option and is perfect for busy days.

Ingredients 

  • ¼ head cauliflower (coarseley chopped; can substitute cauliflower rice )
  • ½ chicken breast
  • 1 ½ tsp lemon juice
  • ¼ tsp dried oregano (divided)
  • ¼ cup cucumbers (diced)
  • ¼ cup peppers (diced)
  • ½ cup tomatoes (diced)
  • 2 tbsp kalamata olives
  • 2 tbsp feta cheese (omit if dairy-free)
  • 1 tbsp balsamic vinegar
  • 2 tsp olive oil

Instructions 

  • Cut the chicken into bite-size pieces.
  • Put 1/3 of the olive oil in a pan. Place chicken, lemon juice, and the oregano in a pan and cook over medium heat for about 7 minutes.
  • Place chopped cauliflower in a blender and blend until resembles rice grains.
  • Put 1/3 of the olive oil in a separate pan and heat on medium heat. Add the cauliflower and salt. Cover and cook for about 5 min or until just soft.
  • Divide the “rice” in bowls. Top with cooked chicken and then with artichoke, tomatoes, olives, and feta. M
  • Blend the vinegar, remaining oil, and oregano. Pour the dressing equally onto each bowl.
