Lemony Fish over Zucchini Noodles

Delicate fish fillets are infused with zesty lemon flavors and perfectly complemented by the fresh and light zucchini noodles.

Ingredients 

  • ¼ pound fish
  • 1 ½ tsp lemon juice
  • 1 ½ tsp flour
  • 1 tbsp olive oil (divided)
  • 1 clove garlic
  • ½ cup grape tomatoes (halved)
  • ¼ avocado (diced)
  • ¼ green onion
  • ¼ lemon zest from
  • fresh basil (to taste)
  • 5 oz zoodles (zucchini noodles)
  • parmesan ribbons (optional)

Instructions 

  • Dust the fish in flour.
  • Heat a quarter of the olive oil in a pan. When hot add fish. Cook until golden and flip. Cook for another 3-5 min. Set aside.
  • In a separate pan, add 1/4 of the olive oil. When hot add garlic and cook until almost golden. Add zucchini noodles, lemon zest, and juice and cook for about 4 min or until “noodles” are soft.
  • In a separate bowl, combine tomatoes, avocado, onion, the remaining olive oil, salt and pepper.
  • Place noodles on a plate and top with the fish and cover with tomato mixture. Top with fresh basil & Parmesan ribbons.
