Ingredients
- ¼ lb white fish (firm variety)
- 1 ½ tsp lime juice (freshly squeezed)
- 1 ½ tsp olive oil
- ¼ cup carrots (diced)
- ¼ red pepper
- 1 clove garlic
- ⅛ jalapeno (finely chopped)
- ⅛ onion (diced)
- ¾ tsp tomato paste
- ½ tsp paprika
- ¼ tsp cumin
- ¼ cup chicken (or fish stock)
- 2 tbsp tomatoes (fresh is best; diced)
- ½ cup coconut milk
- cilantro (optional)
- lime wedge (optional)
Instructions
- Cut fish into 2” pieces and toss with lime juice.
- Add olive oil to a large pan and place over high heat. Add garlic, onion, and salt. Stir and cook for 3 min.
- Turn the heat to medium and add carrot, pepper, and jalapeño and cook 5 min. Add tomato paste, spices, stock, tomatoes, and coconut milk. Stir well, place fish in stew, and cover. Cook for about 5 min.
- Serve over rice (optional) and top with cilantro and lime wedge.
