Ingredients
- ¼ cup cauliflower
- ¼ cup broccoli (include stems)
- ¼ cup carrots (grated)
- 1 cup lentils (red or yellow, cooked)
- 2 clove garlic (minced)
- â…“ cup old-fashioned oats (not steel cut oats (certified gluten-free if needed))
- 1 egg
- 1 tbsp flaxseed (ground)
Instructions
- Put cauliflower and broccoli into food processor until finely minced. Place in bowl.
- Put carrots in the food processor until finely minced and add to other veggies in bowl.
- Add cooked lentils (very soft), garlic, oats, eggs, and flaxseed to the bowl and mix well.
- You can choose to add *optional ingredients. Form into small balls. Bake in an oven preheated to 400F on a baking tray – 15-20 mins.
