Greek shrimp with tomatoes, olives, peppers, and feta is hearty, bright, and packed with flavor.

Ingredients 

  • ½ tsp olive oil
  • ½ tomato (ripe, diced)
  • 3 olives (your choice, we recommend kalamata)
  • 3 shrimp (you can add more or less)
  • 1 ½ tsp feta cheese
  • ½ tsp oregano
  • 2 tbsp red bell peppers (roasted)
  • 2 tbsp onions (carmelized)

Instructions 

  • Heat up a saucepan with olive oil on medium-high heat. SautĂ© the diced ripe tomatoes for 2-3 minutes, then add the already cooked shrimp and cook 3-4 minutes, making sure not to overcook them.
  • Add the roasted red bell peppers, and the cooked onions into the pan with the shrimp and tomatoes.
  • Dice the olives and add them and the rest of the ingredients to the shrimp, onions, and peppers. Salt and pepper to taste and serve.
