Ingredients
- 1 egg
- â…› cup milk (almond, coconut, or cow's)
- ¼ tbsp butter
- ¼ cup mushrooms (sliced)
- ¼ cup arugula (packed, chopped)
- 1/16 cup goat cheese (crumbled)
Instructions
- Preheat the oven to 375.
- Beat the eggs and milk together and set aside.
- Melt the butter over medium-high heat in an oven-safe pot. Add the mushrooms and cook until almost soft. Then add the arugula, stir, Â and let it wilt. Add the eggs/milk. Crumble the goat cheese over it.
- Pour into prepared baking dish and bake for 20 minutes or until set.
