Ingredients
- ½ cup milk (or any type of milk)
- 1 cup chicken stock (or vegetable stock)
- ½ sweet potato (cooked, diced)
- 2 cups kale (ribs removed)
- 2 oz Italian sausage (can use links or ground or can substitute ground chicken )
- sliced avocado (optional)
Instructions
- Brown the ground or sliced sausage.
- Pour chicken stock into a pot.
- Add the milk, sweet potatoes, and sausage.
- Add in the kale and cook the soup on medium or medium-high heat until the soup starts to simmer. Reduce the heat and cook for an additional 10 minutes until the kale is entirely wilted.
