Ingredients
- 2 cups mixed greens
- 1/12 cup dill (fresh, chopped)
- 1 ½ oz smoked salmon (substitute tempeh for vegetarian)
- â…™ cups white beans (cooked)
- â…™ tbs capers
Vinaigrette:
- ¼ tbs olive oil
- 1/24 cup rice wine vinegar
- 1/12 cup water
- â…“ tbs lemon juice
- â…™ tsp dijon mustard
- â…™ tsp parsley (chopped)
- 1/24 tsp shallot (chopped)
- 1/24 tsp salt
- 1/12 tsp black pepper
Instructions
- Place all vinaigrette ingredients in a jar. Shake well until thoroughly mixed.
- Toss salad greens in vinaigrette. Top salad with smoked salmon pieces, beans, capers, and dill.
