Ingredients 

  • ½ cup chicken (cooked and diced)
  • ¼ cup onion (diced; can use yellow, white or red)
  • ½ clove garlic (minced)
  • ½ cup corn (fresh, frozen, or from a can)
  • ½ cup black beans (drained and rinsed)
  • ¾ cup tomatoes (crushed, canned)
  • 1 cup chicken stock
  • tsp cayenne powder
  • ¾ tsp dried oregano
  • ½ tsp smoked paprika
  • 1/16 cup cilantro
  • ¼ lime (juiced)
  • ¾ tsp olive oil

Optional Toppings

  • cilantro
  • avocado
  • salt and pepper (to taste)

Instructions 

  • Heat up a large pan on medium-high heat with your olive oil. Once the pan is hot and the oil is sizzling, then toss in your diced onions and garlic. Cook until onions are translucent.
  • add cooked, diced chicken, black beans, corn, tomatoes, and chicken stock. Stir together and turn the heat down until simmering.
  • Add in the spices—cayenne pepper, oregano, paprika, lime juice, and salt and pepper to taste.
  • Simmer for an additional 10 minutes and then serve!
  • Top with optional ingredients, if desired.
