This hearty stew features tender chunks of fish simmered in a rich and fragrant broth and bursts with exotic flavors and colorful ingredients.

Ingredients 

  • ¼ lb white fish (firm variety)
  • 1 ½ tsp lime juice (freshly squeezed)
  • 1 ½ tsp olive oil
  • ¼ cup carrots (diced)
  • ¼ red pepper
  • 1 clove garlic
  • jalapeno (finely chopped)
  • onion (diced)
  • ¾ tsp tomato paste
  • ½ tsp paprika
  • ¼ tsp cumin
  • ¼ cup chicken (or fish stock)
  • 2 tbsp tomatoes (fresh is best; diced)
  • ½ cup coconut milk
  • cilantro (optional)
  • lime wedge (optional)

Instructions 

  • Cut fish into 2” pieces and toss with lime juice.
  • Add olive oil to a large pan and place over high heat. Add garlic, onion, and salt. Stir and cook for 3 min.
  • Turn the heat to medium and add carrot, pepper, and jalapeño and cook 5 min. Add tomato paste, spices, stock, tomatoes, and coconut milk. Stir well, place fish in stew, and cover. Cook for about 5 min.
  • Serve over rice (optional) and top with cilantro and lime wedge.
