- ½ cup chicken (cooked and diced, can substitute turkey)
- 1 tortilla
- ¼ cup peppers (roasted)
- ¼ onion (roasted)
- ¼ zucchini (roasted)
- ¼ cup salsa (your choice, no sugar added)
Instructions
- Preheat oven to 425º.
- Place the diced vegetables on a baking sheet. Drizzle with olive oil and roast in the oven for 20-25 minutes or until tender.
- Combine the vegetables, cooked chicken, and salsa in a bowl.
- Place the mixture in a tortilla, wrap, and enjoy!
