Ingredients 

  • ½ cup chicken (cooked and diced, can substitute turkey)
  • 1 tortilla
  • ¼ cup peppers (roasted)
  • ¼ onion (roasted)
  • ¼ zucchini (roasted)
  • ¼ cup salsa (your choice, no sugar added)

Instructions 

  • Preheat oven to 425º.
  • Place the diced vegetables on a baking sheet. Drizzle with olive oil and roast in the oven for 20-25 minutes or until tender.
  • Combine the vegetables, cooked chicken, and salsa in a bowl.
  • Place the mixture in a tortilla, wrap, and enjoy!
