Treat yourself to a taste of summer with these grilled peaches! Grilling the peach intensifies the natural sweetness and creates a caramelized exterior.

Ingredients 

  • ½ peach (large)
  • ¾ tsp olive oil (can substitute butter )
  • ¾ tsp pure maple syrup
  • 2 ¼ tsp Greek yogurt
  • ¾ tsp mascarpone cheese
  • 1 ½ tsp fresh mint leaves (chopped)

Instructions 

  • Cut the peach in half and remove the pit.
  • Brush pieces with olive oil. Place on medium heated grill cut side down and grill for 2 min. on each side.
  • In a bowl, mix together the maple syrup, yogurt, and mascarpone.
  • Scoop the mixture equally into the well of each peach. Top with mint.
