Ingredients
- ¼ pound fish
- 1 ½ tsp lemon juice
- 1 ½ tsp flour
- 1 tbsp olive oil (divided)
- 1 clove garlic
- ½ cup grape tomatoes (halved)
- ¼ avocado (diced)
- ¼ green onion
- ¼ lemon zest from
- fresh basil (to taste)
- 5 oz zoodles (zucchini noodles)
- parmesan ribbons (optional)
Instructions
- Dust the fish in flour.
- Heat a quarter of the olive oil in a pan. When hot add fish. Cook until golden and flip. Cook for another 3-5 min. Set aside.
- In a separate pan, add 1/4 of the olive oil. When hot add garlic and cook until almost golden. Add zucchini noodles, lemon zest, and juice and cook for about 4 min or until “noodles” are soft.
- In a separate bowl, combine tomatoes, avocado, onion, the remaining olive oil, salt and pepper.
- Place noodles on a plate and top with the fish and cover with tomato mixture. Top with fresh basil & Parmesan ribbons.
