Ingredients 

  • ½ cup broccoli (chopped)
  • ½ cup cauliflower
  • 1 tbsp olive oil
  • 1 tbsp vegetable broth
  • salt and pepper (to taste)

Instructions 

  • Put vegetables in blender in batches and blend until the size of rice.
  • Add oil to skillet and heat over medium/high heat.
  • Add the “rice” and cook for 4 minutes.
  • Add broth, cover, cook additional 5 minutes, and serve.
