Ingredients 

  • 1 tsp butter (or oil)
  • ½ cup asparagus (cut in bite-size pieces)
  • 2 eggs (beat well)
  • 1 oz smoked salmon (could substitute lox)
  • ½ tsp dried dill
  • cup goat cheese (crumbled )
  • salt and pepper (to taste)

  • Heat butter in a pan over medium heat.
  • Add asparagus, eggs, salmon, and dill. Stir while cooking until the eggs are set.
  • Put on plate and crumble goat cheese over eggs.
  • Option: Put on whole wheat toast.
