Ingredients 

  • ¼ cup mango (diced into small pieces)
  • ¼ cup red pepper (diced into small pieces)
  • ¼ cup cucumbers (diced into small pieces)
  • â…› cup red onion (diced into small pieces)
  • ¼ cup cilantro (chopped into small pieces)
  • â…› red wine vinegar

Instructions 

  • Mix all your ingredients together and serve alongside some fish tacos, chips or like I did alongside some tuna cakes!
