Ingredients 

Dressing

  • 2 tsp peanut butter (no sugar added)
  • 2 tsp water
  • ½ tsp olive oil
  • 1 tsp seasoned rice vinegar
  • 1 tsp agave (or honey)
  • 1 tsp soy sauce (low sodim)
  • â…› tsp sesame oil
  • ¼ lime (juiced)

Salad

  • 1 cup cole slaw mix
  • 2 tsp cilantro (chopped)
  • 3 tbsp edamame (shelled)
  • ½ green onion (chopped)
  • 2 tbsp carrots (shredded)
  • 2 tbsp red pepper (diced)
  • â…“ cup chicken (cooled and shredded or chopped)

Instructions 

  • Make the Dressing: Blend all peanut dressing ingredients until smooth. Set aside or refrigerate if making ahead.
  • Assemble the Salad: In a large bowl, combine coleslaw mix, cilantro, edamame, green onion, carrot, bell pepper, and chicken.
  • Toss with dressing.
