Ingredients
- ¾ tsp oil
- ¼ onion (diced)
- ¾ clove garlic (minced)
- ¼ bunch kale (chopped, stems removed)
- 1 ½ cups vegetable broth
- ½ cup tomatoes (canned, diced)
- ¼ sweet potato (large, peeled, and diced)
- 1 ½ tsp lemon juice (fresh)
- ¾ tsp dried tarragon
- parmesan cheese (grated (optional))
- salt and pepper (to taste)
Instructions
- Put oil in a medium size pot. Add onions and garlic and sauté over medium heat until they are just soft.
- Add broth, kale, sweet potato, lemon juice and tarragon. Cover and cook on low heat for 25 min.
- Spoon into bowls and sprinkle with parmesan cheese.
