Ingredients 

  • 2 tbsp vegetable broth (can substitute chicken broth)
  • 1 tbsp olive oil
  • 1 tomato (large, diced)
  • ½ cup basil (fresh, chopped)
  • 1 slice mozzarella (fresh mozzarella is best)
  • 1 egg
  • salt and pepper (to taste)

Instructions 

  • Put broth and oil in a small pan.
  • Add tomatoes and basil.
  • Crack the egg and gently place on top of tomatoes and then place cheese on top of egg.
  • Cover and cook over medium heat until egg is cooked - approximately 5 minutes.
