Ingredients 

  • ¼ cup prunes (pitted; can substitute dates)
  • 3 tbsp boiling water
  • ¼ cup cacao powder (Can sub cocoa powder but cacao has more nutrients)
  • 1 egg
  • 1 ¾ tsp maple syrup (can sub honey)
  • 1 ¾ tsp vanilla extract
  • ¼ cup dark chocolate chips
  • ½ cups strawberries (chopped)
  • ½ cups blueberries

Instructions 

  • Place dates or prunes in a glass dish and pour boiling water over them. Let sit and soften for 15 minutes.
  • Preheat the oven to 350ºF.
  • Grease a baking dish or line with parchment paper.  
  • Put dates/prunes and the liquid into a blender. Add eggs, maple syrup, and vanilla and blend until smooth. Add chips and blend until almost smooth. Pour the mixture into a bowl and stir in cacao powder.
  • Pour the batter into a prepared baking dish. Put in oven and cook for about 35 minutes or until batter is set.
  • Once it cools, top with berries and enjoy.

Makes 2 servings.
