- 4 oz chicken breast
- ½ cup Brussels sprouts (halved)
- ¼ cup onion (diced )
- ¼ cup quinoa (cook according to package)
- ½ tbsp olive oil
- salt & pepper (to taste)
Instructions
- Preheat oven to 400°. Toss Brussels sprouts and onions with olive oil, salt, and pepper; roast for 20 minutes or until desired doneness.
