Ingredients
- 4 oz salmon
- ½ sweet potato (small, cubed)
- ½ cup broccoli (florets)
- ½ tbsp olive oil
- salt & pepper (to taste)
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato and broccoli with olive oil, salt, and pepper and bake for 15 minutes.
- Season salmon with seasoning of your choice. Add to oven with the sweet potatoes / broccoli and cook an additional 15 minutes.
