Ingredients
Soup
- â…™ yellow onion (diced)
- ¼ cup red lentils
- 1 cup water
- â…™ lb spicy Italian sausage (ground or links with casings removed)
- â…™ sweet potato (large)
- ½ tsp curry powder (more or less depending on your taste)
- 2 tbsp fresh basil leaves (Thai basil is best)
- 2 tbsp vegetable broth (can substitute chicken broth)
- 4 tsp milk (cashew, almond, coconut, or reg)
- salt and pepper (to taste)
Homemade Croutons for Topping
- ½ slice bread
Instructions
- Put 6 cups water in large pot and bring to a low boil. Add lentils and stir.
- Add sweet potatoes, onion and garlic. Turn heat to low and cover.
- In a separate pan, cook Italian sausage and add cooked meat to pot.
- Cover and cook for 25 minutes or until lentils and potatoes are soft.
- Add broth, milk, curry powder, and basil, stir, and cook an additional 5 minutes.
- For croutons: dice bread, toss in olive oil, and cook in a pan over a medium-high stovetop until crisp.
Notes
Optional - top with croutons.
