Lentil, Sweet Potato and Sausage Soup

Ingredients 

Soup

  • yellow onion (diced)
  • ¼ cup red lentils
  • 1 cup water
  • lb spicy Italian sausage (ground or links with casings removed)
  • sweet potato (large)
  • ½ tsp curry powder (more or less depending on your taste)
  • 2 tbsp fresh basil leaves (Thai basil is best)
  • 2 tbsp vegetable broth (can substitute chicken broth)
  • 4 tsp milk (cashew, almond, coconut, or reg)
  • salt and pepper (to taste)

Homemade Croutons for Topping

  • ½ slice bread

Instructions 

  • Put 6 cups water in large pot and bring to a low boil. Add lentils and stir.
  • Add sweet potatoes, onion and garlic. Turn heat to low and cover.
  • In a separate pan, cook Italian sausage and add cooked meat to pot.
  • Cover and cook for 25 minutes or until lentils and potatoes are soft.
  • Add broth, milk, curry powder, and basil, stir, and cook an additional 5 minutes.
  • For croutons: dice bread, toss in olive oil, and cook in a pan over a medium-high stovetop until crisp.

Notes

Optional - top with croutons.
