Ingredients
- ½ banana (large, ripe)
- ½ cup cottage cheese
- 1 egg
- ¼ cup muesli
- 2 tbsp pecans (chopped)
- ½ tsp baking soda
- 1 cup blueberries (can substitute diced strawberries)
- 1 tsp butter (or oil)
Instructions
- Blend all ingredients
- Combine ingredients. Pour the banana mixture into a bowl and fold in the muesli and chopped pecans. Mix until just combined, being careful not to overmix.
- Cook the pancakes. Heat a non-stick skillet over low heat and grease with butter or oil. Scoop batter for pancakes into pan
- Flip and finish. Cover and Cook for 2–3 minutes/ Flip and cook for another 2-3 minutes, until golden brown.
- Microwave berries or cook in pan over low heat until soft and juicy. Smoosh with a fork and pour over pancakes
