Ingredients
- ¼ cup pecans (chopped)
- ½ cup flour
- ¼ banana (ripe)
- ¾ tsp baking powder
- 1 ½ tsp pure maple syrup
- ¼ tsp cinnamon
- ⅛ tsp allspice
- 1 ⅓ tbsp coconut oil (melted; can substitute butter)
- 1 ¼ cup pumpkin puree
- 1 tbsp milk (almond milk, low-fat milk, etc.)
- ⅛ tsp vanilla extract
Instructions
- Preheat oven to 400º.
- Mash the banana with the back of a fork in a bowl. Add the remaining ingredients and stir well.
- Place a small ball of dough on a greased baking pan. Shape the dough into a small loaf or into a slight crescent shape. Cook for 20 minutes.
