Ingredients
- 4 oz carrots (about 1 medium to large carrot, peeled and sliced into rounds or sticks)
- 1 tsp olive oil
- ¼ tsp dried dill (fresh, chopped)
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the carrots with olive oil (or butter), dill, salt, and pepper.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast for 20–25 minutes, stirring halfway through, until tender and caramelized.
