Ingredients
- ¼ pound salmon
Tomato Relish
- 1 tbsp red peppers (chopped)
- 1 tbsp tomatoes (diced)
- 1 tbsp onion (diced)
- 1 ½ tsp balsamic vinegar
- 1 tbsp fresh basil (chopped (use parsley for filming, basil froze))
- 1 ½ tsp olive oil (divided)
- salt and pepper (to taste)
Instructions
- In a small pot add 1/3 the oil and heat over medium heat. Add onions and cook until soft. Add vinegar and stir. Add peppers and cook for 2 minutes. Remove from heat and add tomatoes.
- In a separate skillet add the remaining oil. When hot, add the salmon - skin side up. Cook for 4 minutes or until seared. Turn heat to low. Flip and cook until cooked throughout (time varies according to thickness).
- Top with tomato relish and fresh basil.
