Succulent shrimp are tossed with creamy mayo, crunchy celery, and zesty herbs to create this scrumptious salad.

Ingredients 

  • ¼ pound shrimp (peeled and deveined)
  • ¼ stalk celery
  • ¼ green onion
  • 1 tbsp mayonnaise (no sugar added)
  • ¼ tsp dried dill
  • ¼ tbsp lemon juice
  • ¼ tsp horseradish
  • ¼ tsp vinegar
  • salt (to taste)

Instructions 

  • Cook shrimp in boiling water until just cooked (2-3 Min). Drain and let cool.
  • In a bowl, combine celery, onion mayonnaise, horseradish, vinegar, lemon juice, and salt. Chop shrimp and add to the bowl. Stir well.
  • Scoop the mixture into lettuce leaves or a whole wheat bun.
