Ingredients
Salad
- 2 cups mixed greens
- 1 tbsp dill (fresh, chopped)
- 1 ½ oz smoked salmon (substitute tempeh for vegetarian)
- ¼ cups white beans (cooked)
- ½ tsp capers
Vinaigrette
- ¼ tbs olive oil
- 2 tsp rice wine vinegar
- 4 tsp water
- 1 tsp lemon juice
- ¼ tsp dijon mustard
- ¼ tsp parsley (chopped)
- 2 tsp shallot (chopped)
- salt and pepper to taste
Instructions
- Place all vinaigrette ingredients in a jar. Shake well until thoroughly mixed.
- Toss salad greens in vinaigrette. Top salad with smoked salmon pieces, beans, capers, and dill.
