Ingredients
- ¾ tsp coconut oil
- ¾ tsp ginger
- ¼ tsp garlic (minced)
- ¾ tsp red curry paste
- ¼ cup mushrooms (any fresh variety will work)
- 2 oz snap peas (strings removed and cut into bite sizes pieces)
- â…› cup onions (diced)
- ½ cup chicken broth (can substitute vegetable broth)
- 4 oz coconut milk (organic preferred)
- â…™ cup chicken (*raw or cooked, diced)
- fresh basil
Instructions
- Put oil in a pot and cook on med/high heat until oil melts.
- Add ginger, garlic, and red curry paste and stir well.
- Add mushrooms, snap peas, onions, broth, and coconut milk. Cover and cook for 5 min.
- *If you are using raw chicken, cut it into small pieces and add just after the garlic. Cook chicken through before adding the red curry paste.
- Add cooked chicken and cook an additional 5 min. Garnish with fresh basil.
