Ingredients
- ½ cup zucchini (sliced thin)
- â…™ cup ground beef (cooked, grassfed is best or chorizo)
- 1 egg
- 1 tsp avocado oil
Instructions
- Heat oil in a pan. Add single lawyer of zucchini and cook over medium heat for 4 minutes. Flip zucchini over and sprinkle cooked ground beef on top. Add 1 egg. Cover and cook over low heat until egg is set (about 5 min).
Notes
Optional: Top with diced avocado and salsa

This is one of my favorite high protein breakfast:
1/2 cup of unsweetened almond milk, vanilla flavored
I T of ground flaxseed
3 T of hemp seeds
3/4 cup of plain Greek yougurt
1 scoop of protein powder
1/4 Blueberries or raspberries
Over 50 grams of protein and delicious
