Ingredients
- ½ lb salmon (cooked and cooled)
- 1 scallion (sliced)
- 2 tbsp fresh dill (chopped)
- ¼ cup celery (chopped)
- 1 tbsp mayonnaise
- 2 tbsp plain yogurt
- 1 tbsp lemon juice (freshly squeezed)
- 1 tsp Dijon mustard
- ½ cup spinach (chopped)
Instructions
- Bake salmon in the oven at 425º for 12-15 minutes or until the desired doneness.
- In a big bowl, combine the rest of the ingredients and mix well. Add flaked salmon and mix. Enjoy!
