Ingredients 

  • ½ lb salmon (cooked and cooled)
  • 1 scallion (sliced)
  • 2 tbsp fresh dill (chopped)
  • ¼ cup celery (chopped)
  • 1 tbsp mayonnaise
  • 2 tbsp plain yogurt
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • ½ cup spinach (chopped)

Instructions 

  • Bake salmon in the oven at 425º for 12-15 minutes or until the desired doneness.
  • In a big bowl, combine the rest of the ingredients and mix well. Add flaked salmon and mix. Enjoy!
